Tuna peppercorn puff

Tuna peppercorn puff

 

 

You can serve this delicious and easy to cook appetizer beside a fresh salad to make an excellent summer dinner.


Ingredients

3 Egg,(s) hardboiled, sliced
1 Egg,lightly beaten
3/4 cup Milk
30 g Butter
2 tbsp Flour
2 tbsp Dill,fresh, finely chopped
2 cans Tuna Fish
6 sheets Puff Pastry,(12cm)
Salt and Pepper
3 Green Onions,chopped
1 tsp Green Peppercorns,crushed

Directions
Drain tuna while setting aside ¼ cup of liquid.
In a medium saucepan, heat and stir butter, onion and peppercorn for 2 minutes or until onion is soft then add flour and cook for another minute. Remove from heat and cool slightly for 2 minutes.
Add liquid and milk to mixture and stir well. Return to heat and stir until mixture boils and thickens. Remove from heat and leave to cool. Then add tuna and mix well then season with salt and pepper.
Brush oven tray with oil and place 3 sheets on it. Top each one with an egg slice and leaving 0.5cm border, add 1/3 tbsp tuna mixture. Cover with remaining sheets and press edges together to close. Using a fork decorate puffs as desired and brush with beaten egg.
Place tray into oven and bake for 15-20 minutes over medium heat until golden brown.
